Nicole McLaughlin

Appears on the Today Show

If you watched the Today show on August 4 you might have seen our own Nicole McLaughlin stirring sweet potatoes and black beans together for a taco or shaping hashbrowns into an omelet cup. As the producer and star of the popular food series from Allrecipes, Get Cookin, she was chosen to introduce the Fall issue of the Allrecipes magazine that features Savannah Guthrie on the cover. “They unveiled the magazine cover at the beginning of my segment,” Nicole told me, “and then I prepared recipes from that issue.” This was her first time on national live TV and despite all her preparations, she said she still had to wing it. When asked how she thought it went, she replied, “Savannah and Hoda both were nice and engaging, Carson Daly said hello and asked how I was doing, and Al Roker loved the food. All in all, I’d say it was a success! “

Alex Gaskins

Children’s Book Author “I Have, Not I AM”

Alex Gaskins is an Alabama native, graduate of Spain Park and Samford University and a labor and delivery nurse at Grandview. Not content to stop there, she has now also become the author of a children’s book. I Have, Not I Am is based on her two nieces, one with Downs Syndrome, the other on the Autism spectrum. Because of that, she wanted to teach her own children at an early age that being different is normal. Her book reminds us that many qualities go into making a person who he/she is. A physical, or behavioral difference should never define any of us. ‘I Have, Not I Am’ can be purchased on Amazon and 10% of all profits from sales will be donated to Unless U in Vestavia.
